Arabic Style Crispy Fried Cauliflower
Ingredients
- 1 head cauliflower
Batter mixture
- 1 cup flour
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 cup finely chopped dill
- 1/2 cup finely chopped cilantro
- 1/2 cup finely chopped parsley
- 1 cup cold water
Coating
- 1.5 cups flour
- pinch of salt
For frying
- corn oil
Garnish
- chopped parsley
Preparation
Cut the cauliflower into medium-sized pieces and blanch it for a few minutes without fully cooking it. Let it cool.
In a plate, combine flour, cornstarch, baking powder, baking soda, salt, black pepper, cumin, chili powder, paprika, dill, cilantro, and parsley. Mix the ingredients together using a hand whisk.
Gradually add cold water while stirring to form a liquid batter. Use it immediately.
For the coating, place flour in a wide plate and sprinkle with salt. Add about 2 tablespoons of the batter mixture to the flour, mix with fingertips to resemble bread crumbs, and set aside.
Heat oil in a deep skillet for frying.
Take a few pieces of cauliflower and dip them in the batter.
Immediately coat the cauliflower in the flour mixture.
Fry the cauliflower in hot oil until golden brown.
Place the fried cauliflower on a rack to cool slightly and serve.
