Baked Coconut Macaroons
Ingredients
- 2 large eggs
- 1/2 cup fine-grained sugar
- 1 tsp vanilla extract
- 1/8 tsp salt
- 2 cups fine coconut

Preparation
Preheat the oven to 160 degrees, set the middle rack, and prepare a shallow baking sheet with parchment paper.
In a bowl, place the eggs, sugar, and vanilla, and using an electric mixer, beat for a few minutes until the mixture is light and very pale.
Using a plastic spoon, add the coconut and mix to get a smooth dough; the amount of coconut may vary by type, so add it gradually to achieve a smooth, easy-to-shape dough.
Shape the dough into 20 balls.
Place them on the baking sheet with spaces between them.
Gently press each ball with your finger to flatten slightly or leave as balls, as desired.
Bake for 15 to 20 minutes until golden brown, adjusting browning to preference.
Let it cool completely.
Serve plain or sprinkle with powdered sugar.
