Baked Rice Pudding with Fruits
Ingredients
- 1/2 cup short grain rice
- 4 cups milk
- 1 cinnamon stick
- 1 lemon or orange peel
- 2 teaspoons butter
- 1/4 cup sugar
- 1/4 cup raisins
- 3 apricots, quartered
- 3 figs, quartered
- 3 peaches, quartered
Preparation
In a deep stainless steel pot, place the rice, cover with water, boil until the grain opens slightly, then drain and set aside.
Preheat the oven to 160°C and prepare a medium-sized baking dish.
In a thick-bottomed pot, place the milk, cinnamon stick, and lemon or orange peel, and let it boil for 5 minutes.
Remove the cinnamon stick and lemon or orange peel from the milk.
Add butter and sugar to the milk and stir until the sugar dissolves.
Add the boiled rice, raisins, apricots, figs, and peaches to the mixture.
Place the mixture in the baking dish.
Bake in the oven for 30-35 minutes until the milk thickens slightly and the surface browns.
Serve warm or cold.
