Berry Cherry Fruit Cobbler

Ingredients

  • 1 c. Cherries, pitted and halved
  • 1 c. strawberries, chopped
  • 2 c. Blueberries
  • 1 c. Granulated sugar
  • 3 tbsp cornstarch
  • Pinch salt

Cake batter

  • 6 tbsp unsalted butter, softened
  • 2/3 c. Granulated sugar
  • 1 egg
  • 1/3 c. Sour cream
  • 1/2 c. Whole milk
  • 1 tsp vanilla bean paste, or extract
  • 1 c. All purpose flour
  • 1/2 c. Old fashioned oats
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 tsp salt

Preparation

  1. Preheat oven to 350F and grease a 9x13” casserole dish with a little butter.

  2. Add cherries, strawberries, blueberries, sugar, cornstarch, and salt to the dish. Stir until combined and coated evenly. Set aside.

  3. In a large bowl, cream together butter and sugar until combined well. Add in egg and sour cream and beat until combined. Add in whole milk and vanilla and beat once more.

  4. Add in dry ingredients and stir until just combined.

  5. Pour over fruit and spread.

  6. Bake for 45-50 minutes. If the top starts getting too dark then place a piece of foil or parchment on top to stop it from browning.

  7. Allow to cool about 10 minutes and serve with whipped cream or ice cream.
