Blueberry Crumble Pots
Ingredients
- 300g blueberries
- 1/2 tbsp cornstarch
- 1 tbsp coconut sugar
- for the crumble topping:
- 1 cup oats
- 1/2 cup spelt flour
- 1/4 cup coconut oil melted
- big pinch of salt
- 3 heaped tbsps coconut sugar
- 1/4 tsp baking powder
Preparation
Preheat the oven to 170c
Mix blueberries, cornstarch & sugar in a bowl & then use mixture to fill 4 ramekins to about 1cm from top
Next, mix all the crumble ingredients in a bowl & use your fingers to rub together
Sprinkle crumble on top of blueberries & press down lightly
Bake in the oven for 20-25 mins until blueberries are bubbling & the top is golden! enjoyyy
