Blueberry Crumble Pots

Ingredients

  • 300g blueberries
  • 1/2 tbsp cornstarch
  • 1 tbsp coconut sugar
  • for the crumble topping:
  • 1 cup oats
  • 1/2 cup spelt flour
  • 1/4 cup coconut oil melted
  • big pinch of salt
  • 3 heaped tbsps coconut sugar
  • 1/4 tsp baking powder

Preparation

  1. Preheat the oven to 170c

  2. Mix blueberries, cornstarch & sugar in a bowl & then use mixture to fill 4 ramekins to about 1cm from top

  3. Next, mix all the crumble ingredients in a bowl & use your fingers to rub together

  4. Sprinkle crumble on top of blueberries & press down lightly

  5. Bake in the oven for 20-25 mins until blueberries are bubbling & the top is golden! enjoyyy
