Baked Blueberry Banana Oatmeal Donuts
Ingredients
- 3 cups rolled oats
- 2 bananas, mashed
- 1 cup non-dairy milk of choice
- 1/4 cup coconut oil, melted
- 3/4 cup blueberries
- 3 tbsp maple syrup
- 1 chia egg (1 tbsp chia seed mixed with 2 tbsp water, let sit for 5 mins)
- 2 tsp baking powder
- A pinch of salt
Preparation
Prepare chia egg by mixing 1 tablespoon chia seeds with 2 tablespoons water and let sit for 5 minutes
Mash 2 bananas
Preheat oven to 350 degrees F
Mix all ingredients together except blueberries until well combined.
Fold in blueberries and pour into a greased donut or muffin tin, filling to the top.
Bake for 35 minutes.
Let cool and serve.
