Baked Blueberry Banana Oatmeal Donuts

Ingredients

  • 3 cups rolled oats
  • 2 bananas, mashed
  • 1 cup non-dairy milk of choice
  • 1/4 cup coconut oil, melted
  • 3/4 cup blueberries
  • 3 tbsp maple syrup
  • 1 chia egg (1 tbsp chia seed mixed with 2 tbsp water, let sit for 5 mins)
  • 2 tsp baking powder
  • A pinch of salt

Preparation

  1. Prepare chia egg by mixing 1 tablespoon chia seeds with 2 tablespoons water and let sit for 5 minutes

  2. Mash 2 bananas

  3. Preheat oven to 350 degrees F

  4. Mix all ingredients together except blueberries until well combined.

  5. Fold in blueberries and pour into a greased donut or muffin tin, filling to the top.

  6. Bake for 35 minutes.

  7. Let cool and serve.
