Homemade Chocolate Fruit Crepes

Ingredients

  • 1 cup all-purpose flour (gluten-free if needed)
  • 1/2 cup dairy-free milk (I used almond milk)
  • 1/2 cup filtered water
  • 1/4 cup maple syrup
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Coconut oil for cooking

Preparation

  1. In a bowl, combine all dry ingredients and mix well

  2. Add wet ingredients to the dry mixture and stir until a smooth batter forms

  3. Heat a skillet over medium heat and grease with coconut oil

  4. Pour a small amount of batter into the skillet, swirl to spread, and cook until edges set and bubbles form, then flip and cook the other side

  5. Repeat with remaining batter

  6. Fill the crepes with fresh low FODMAP fruits, coconut yogurt, or other fillings as desired
