Vegan Blueberry Oatmeal Bars

Ingredients

  • 2 1/2 cups rolled oats (I used @bobsredmill gf oats)
  • 1 cup mashed ripe banana (about 2 bananas)
  • 1/2 cup nut butter (i used some organic peanut butter)
  • 1/4 cup maple syrup
  • 1 tsp baking powder
  • 1/2 cup blueberries (can use fresh or frozen)

Preparation

  1. In a mixing bowl, add the bananas.

  2. Then add the oatmeal, maple syrup, peanut butter, and baking powder.

  3. Mix everything together with a spatula.

  4. Then fold in the blueberries.

  5. Line a cake or brownie pan with parchment paper.

  6. Add the oatmeal mixture and smooth it out.

  7. Bake at 350F for 40 minutes.

  8. Let cool completely.

  9. Remove from the pan and cut.
