Choc Mint Magnum Ice Cream

Ingredients

  • 1 cup soaked cashews
  • 1 cup coconut cream
  • Large handful spinach
  • Maple syrup to taste
  • Vanilla
  • Peppermint oil to taste
  • 100g dark choc chips
  • 150g dark chocolate
  • 1 tbsp coconut oil

Preparation

  1. Blend the cashews, coconut cream, spinach, maple syrup, vanilla, and peppermint oil until smooth to make the ice cream base.

  2. Pour the mixture into popsicle molds or ice cube trays with sticks and freeze until solid.

  3. Melt the dark chocolate and coconut oil together, and if desired, incorporate the dark choc chips.

  4. Dip the frozen ice cream bars into the melted chocolate mixture and allow to set in the freezer.
