Homemade Pistachio Ice Cream

Ingredients

  • 100 g lightly salted roasted pistachios
  • 20 g cashews, previously soaked in hot water
  • 300 ml soy milk (200 ml if avoiding protein powder)
  • 50 ml maple syrup
  • 30 g unflavored protein powder (optional)
  • Pinch of salt
  • 1 tsp vanilla extract

Toppings

  • Lightly salted roasted pistachios
  • Pistachio butter or spread

Preparation

  1. Place pistachios, cashews, soy milk, maple syrup, protein powder (if using), salt and vanilla extract in a blender and blend until smooth and combined

  2. Pour the mixture into ice cube trays and place in the freezer to set

  3. Once completely frozen add them back to a food processor and blitz blend until creamy

  4. Incorporate crushed pistachios and serve topped with pistachio spread or butter
