Homemade Pistachio Ice Cream
Ingredients
- 100 g lightly salted roasted pistachios
- 20 g cashews, previously soaked in hot water
- 300 ml soy milk (200 ml if avoiding protein powder)
- 50 ml maple syrup
- 30 g unflavored protein powder (optional)
- Pinch of salt
- 1 tsp vanilla extract
Toppings
- Lightly salted roasted pistachios
- Pistachio butter or spread
Preparation
Place pistachios, cashews, soy milk, maple syrup, protein powder (if using), salt and vanilla extract in a blender and blend until smooth and combined
Pour the mixture into ice cube trays and place in the freezer to set
Once completely frozen add them back to a food processor and blitz blend until creamy
Incorporate crushed pistachios and serve topped with pistachio spread or butter
