Chocolate Cinnamon Loaf Bread
Ingredients
Filling
- 2 tablespoons soft butter
- 2 tablespoons fine grain sugar
- 2 tablespoons cinnamon
- 2 tablespoons unsweetened cocoa powder
- 1 cup chocolate chips
- 1/2 cup chopped walnuts or hazelnuts
Dough
- 1 teaspoon vanilla extract
- 1 large egg
- 1/4 cup fine grain sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon instant yeast
- 1/4 cup powdered milk
- 3 cups flour
- 1 tablespoon lemon or orange zest
- 1/2 teaspoon cinnamon
- 4 tablespoons melted butter
- 1 1/3 cups water
Glazing mixture
- 1 large egg yolk
- 1 teaspoon milk
- 1/4 teaspoon vanilla extract
Sugar sauce
- 1 cup powdered sugar
- a little milk
Preparation
In a mixer bowl, place 1 cup flour, milk, yeast, salt, baking powder, sugar, egg, vanilla, orange zest, cinnamon, and butter. Attach the dough hook and mix on medium speed while adding water until a cohesive dough forms. Knead for 5 minutes. Add the remaining flour if the dough is too soft.
Place the dough in an oiled bowl, brush the surface with oil, cover with plastic wrap, and let rise in a warm place for one hour until doubled in size.
Prepare a loaf pan and set it aside.
On a floured surface, roll out the dough into a rectangle 1 cm thick.
Using a wide plastic spoon, spread the soft butter over the rectangle to cover it completely.
Sprinkle the sugar, cocoa powder, cinnamon, chocolate chips, and nuts over the dough. Roll up the dough with the filling into a log, seal the ends, and place in the loaf pan with the seam down.
Cover with plastic wrap and let rise in a warm place until doubled in size.
Preheat the oven to 180°C and position the rack in the middle.
For the glazing mixture, in a small bowl, mix egg yolk, milk, and vanilla with a fork, then brush the log with this mixture.
Bake in the oven for 25 minutes until golden brown.
Remove from the oven and cool on a wire rack until completely cool.
Remove the chocolate loaf from the pan, place on a serving dish, drizzle with sugar sauce, and serve.
To make the sugar sauce, in a deep bowl, place the powdered sugar, gradually add milk while stirring with a fork until a smooth sauce with honey-like consistency is formed, and use immediately.
