Cheese-Filled Simit Bread

Ingredients

Dough

  • 1 cup warm milk
  • 1 tablespoon sugar
  • 1 tablespoon instant yeast
  • 1/4 cup corn oil
  • 1 tablespoon vinegar
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons powdered milk

For glazing

  • 1 egg yolk
  • 1/2 teaspoon sesame seeds

Filling

  • 1 1/2 cups feta cheese
  • 1 egg white
  • 1 cup chopped parsley

For decoration

  • sesame seeds
  • nigella sativa seeds

Preparation

  1. In a mixer bowl, put milk, sugar, and yeast, and leave for a few minutes to activate the yeast.

  2. Add oil, vinegar, half the amount of flour, baking powder, salt, and milk powder. Attach the dough hook and run on low speed to form dough, adding flour as needed. Cover and let rise until doubled in size.

  3. Divide the dough into 8 balls. Cover and let rise until doubled in size.

  4. For the filling, in a bowl, combine cheese, parsley, and egg white by mixing them together.

  5. Prepare a large baking tray and line it with parchment paper.

  6. Take a dough ball, press it to form a thick disc, place some filling in the center, and shape it back into a ball. Place it on the tray. Cover and let rise until doubled in size.

  7. Using a wide wooden spoon, make an indentation in the center of each simit.

  8. Brush the simit with egg yolk.

  9. Put some filling in the center of each simit and sprinkle with sesame seeds.

  10. Preheat the oven to 180°C and bake for 20 minutes until golden brown.
