Vegan Baked Scallion Bread
Ingredients
Dough
- 245g bread/all-purpose/spelt flour, plus more for dusting
- 1 teaspoon baking powder
- a pinch of salt
- 1 tablespoon sugar
- 1 teaspoon active dry yeast
- 2/3 cup warm water
- 1/2 tablespoon vegan butter, softened
Filling
- 10 stalks of scallions, chopped
- 2 tablespoons flour
- 1 teaspoon salt
- 3 tablespoons oil
Toppings
- melted vegan butter for brushing
- sesame seeds
Preparation
Place sugar, warm water, and yeast in a cup and let it sit for 5 minutes.
Place the dough ingredients in a bowl of a stand mixer, add the yeast mixture, and knead into a shaggy dough using a dough hook.
Fold in softened butter and knead again until incorporated, then cover and let the dough rise until double its size.
Heat 3 tablespoons of oil in a pot until bubbles form around chopsticks (about 160F) and slowly pour into the scallion mixture, mix until well combined, and set aside.
Preheat the oven to 375F and lightly grease a baking sheet pan.
When the dough has risen, punch it down and transfer to a cleaned surface.
Divide into 4 equal portions, roll each into a 10-inch circle, and place on the prepared baking sheet.
Spread with 1/3 of the filling on the first circle, top with the second circle, and repeat for the remaining layers, ending with the last dough layer.
Bake in the preheated oven until golden brown.
