Homemade Baked Scallion Bread
Ingredients
Dough
- 245g bread, all-purpose, or spelt flour, plus more for dusting
- 1 teaspoon baking powder
- a pinch of salt
- 1 tablespoon sugar
- 1 teaspoon active dry yeast
- 2/3 cup warm water
- 1/2 tablespoon softened vegan butter
Scallion mixture
- 10 stalks scallions, chopped
- 2 tablespoons flour
- 1 teaspoon salt
Toppings
- melted vegan butter for brushing
- sesame seeds as toppings
Preparation
Place sugar, warm water, and yeast in a cup and let it sit for 5 minutes.
Place the dough ingredients in a bowl of a stand mixer, add the yeast mixture, and knead into a shaggy dough using a dough hook. Fold in softened butter and knead again until incorporated. Cover and let the dough rise until doubled in size.
Heat 3 tablespoons of oil in a pot until bubbles form around chopsticks (about 160F) and slowly pour into the scallion mixture. Mix until well combined and set aside.
Preheat the oven to 375F and lightly grease a baking sheet.
Once the dough has risen, punch it down and transfer to a clean surface. Divide into 4 equal portions.
Roll each portion into a 10-inch circle and place on the prepared baking sheet. Spread one-third of the scallion mixture on the first circle, top with the second circle. Repeat for the remaining layers, ending with dough.
Brush the assembled dough with melted vegan butter and sprinkle with sesame seeds.
Bake for about 27 minutes until golden brown. Brush with more butter before serving.
