Fluffy Cherry Muffins with Powdered Sugar Dusting
Ingredients
Muffin batter
- 125 g softened butter
- 120 g sugar
- 1 packet vanilla sugar
- 2 eggs
- 200 g sour cream
- 250 g all-purpose flour
- 2 teaspoons baking powder
- 1 jar (350g drained weight) cherries
- 6 tablespoons milk
For dusting
- Powdered sugar
Preparation
Cream softened butter with sugar and vanilla sugar until combined
Gradually add eggs and sour cream, mixing well
In a separate bowl, whisk together flour and baking powder
Alternately add the flour mixture and milk to the butter mixture, mixing until just combined
Preheat oven to 180°C (convection: 160°C)
Line a 12-cup muffin tin with paper liners
Distribute the batter into the muffin cups using an ice cream scoop or two spoons
Drain the cherries in a sieve and let them drain
Press 4-5 cherries into each muffin cup
Bake in the preheated oven for about 25 minutes
Let cool
If desired, dust with powdered sugar before serving

Preparation time is just 15 minutes
