Fluffy Cherry Muffins with Powdered Sugar Dusting

Ingredients

Muffin batter

  • 125 g softened butter
  • 120 g sugar
  • 1 packet vanilla sugar
  • 2 eggs
  • 200 g sour cream
  • 250 g all-purpose flour
  • 2 teaspoons baking powder
  • 1 jar (350g drained weight) cherries
  • 6 tablespoons milk

For dusting

  • Powdered sugar

Preparation

  1. Cream softened butter with sugar and vanilla sugar until combined

  2. Gradually add eggs and sour cream, mixing well

  3. In a separate bowl, whisk together flour and baking powder

  4. Alternately add the flour mixture and milk to the butter mixture, mixing until just combined

  5. Preheat oven to 180°C (convection: 160°C)

  6. Line a 12-cup muffin tin with paper liners

  7. Distribute the batter into the muffin cups using an ice cream scoop or two spoons

  8. Drain the cherries in a sieve and let them drain

  9. Press 4-5 cherries into each muffin cup

  10. Bake in the preheated oven for about 25 minutes

  11. Let cool

  12. If desired, dust with powdered sugar before serving

Tips

  2. The cherries keep the muffins moist and fluffy
