Fluffy Pumpkin Paleo Waffle
Ingredients
- 1/2 cup cassava flour
- 1/4 cup pumpkin purée
- 1 mashed ripe banana
- 2 tablespoons olive oil
- 2 eggs (vegan substitute: flax eggs)
- 1 teaspoon baking soda
- 2 teaspoons pumpkin pie spice
Toppings
- Spiced topping (recipe back on feed)
- almond butter
- walnuts
Preparation
Mix the dry ingredients together
Mix the wet ingredients together
Combine the mixtures and stir until smooth
Cook the batter in a preheated waffle iron until golden and fluffy
