Paleo Sweet Potato Pancakes
Ingredients
- 1/3 cup sweet potato purée
- 1/2 cup cassava flour
- 1/2 mashed ripe banana
- 2 tbsp olive oil
- 1/4 cup nut milk
- 2 eggs
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
Toppings
- Bananas
- Berries
- Almond butter
- Flakes
Preparation
Mix dry ingredients: cassava flour, baking soda, and pumpkin pie spice in a bowl.
In another bowl, mix wet ingredients: sweet potato purée, mashed banana, olive oil, nut milk, and eggs.
Combine wet and dry mixtures until just blended. Adjust consistency with more nut milk if needed.
Heat a skillet or griddle over medium heat and add a bit of oil.
Pour batter onto the skillet to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown.
Serve with toppings: bananas, berries, almond butter, and flakes.
