Paleo Sweet Potato Pancakes

Ingredients

  • 1/3 cup sweet potato purée
  • 1/2 cup cassava flour
  • 1/2 mashed ripe banana
  • 2 tbsp olive oil
  • 1/4 cup nut milk
  • 2 eggs
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice

Toppings

  • Bananas
  • Berries
  • Almond butter
  • Flakes

Preparation

  1. Mix dry ingredients: cassava flour, baking soda, and pumpkin pie spice in a bowl.

  2. In another bowl, mix wet ingredients: sweet potato purée, mashed banana, olive oil, nut milk, and eggs.

  3. Combine wet and dry mixtures until just blended. Adjust consistency with more nut milk if needed.

  4. Heat a skillet or griddle over medium heat and add a bit of oil.

  5. Pour batter onto the skillet to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown.

  6. Serve with toppings: bananas, berries, almond butter, and flakes.
