Paleo Carrot Pancakes
Ingredients
- 1/2 cup sweet potato purée
- 2-3 tbsp melted coconut oil
- 2 eggs (vegan sub for flax eggs)
- 1/4 cup nut milk
- 1/2 cup cassava flour
- 1 tsp baking soda
- 1/4 cup fresh grated carrot
- 1 handful chopped walnuts (optional)
- 1 tsp cinnamon + 1/2 tsp all spice, cardamom, nutmeg
Toppings
- Banana
- Fresh grated carrots
- Almond butter
- Walnuts
Preparation
Combine dry ingredients: cassava flour, baking soda, cinnamon, allspice, cardamom, and nutmeg
Combine wet ingredients: sweet potato purée, melted coconut oil, eggs (or flax eggs for vegan), nut milk, and grated carrot
Mix wet and dry ingredients together until smooth, adjusting nut milk for gooey consistency
Heat a pan or griddle with coconut oil over medium heat
Cook pancakes by pouring batter onto the pan and flipping when bubbles form
Serve with toppings: banana, fresh grated carrots, almond butter, and walnuts
