Sweet Potato Almond Butter Pancakes
Ingredients
- 1/3 cup mashed sweet potato
- 2 eggs
- 1/4 cup almond butter
- 1/4 cup nut milk
- 2 tbsp coconut oil
- 1/2 cup almond flour
- 1/4 cup tapioca flour (optional)
- 1 tsp baking soda
Toppings
- Banana
- Cacao nibs
- Almond butter
- Sautéed nectarine
- Granola
- Matcha yogurt
Preparation
Steam or bake sweet potato until soft, peel and mash to make 1/3 cup mashed sweet potato.
Mix eggs, almond butter, nut milk, and coconut oil in a bowl.
In another bowl, combine almond flour, tapioca flour (if using), and baking soda.
Combine the wet and dry mixtures to form a batter.
Heat a skillet or griddle over medium heat and add a little oil.
Pour batter onto the skillet to form pancakes and cook until bubbles appear on the surface, then flip and cook until golden brown.
Serve with desired toppings.
