Paleo Butternut Squash Waffle

Ingredients

  • 1/3 cup butternut squash purée
  • 1/2 mashed ripe banana
  • 1/2 cup cassava flour
  • 2 tbsp olive oil
  • 2-3 tbsp nut milk (if the batter is too dry)
  • 2 eggs
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice

Toppings

  • Strawberry
  • Kiwi
  • Almond butter
  • Hemp seeds
  • Coconut flakes

Preparation

  1. Mash the banana if not already mashed

  2. Combine all ingredients in a bowl to form a smooth batter, adding nut milk as needed for consistency

  3. Preheat waffle iron to medium-high heat

  4. Pour batter into waffle iron and cook until golden and crisp, about 3-5 minutes

  5. Serve with desired toppings
