Paleo Butternut Squash Waffle
Ingredients
- 1/3 cup butternut squash purée
- 1/2 mashed ripe banana
- 1/2 cup cassava flour
- 2 tbsp olive oil
- 2-3 tbsp nut milk (if the batter is too dry)
- 2 eggs
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
Toppings
- Strawberry
- Kiwi
- Almond butter
- Hemp seeds
- Coconut flakes
Preparation
Mash the banana if not already mashed
Combine all ingredients in a bowl to form a smooth batter, adding nut milk as needed for consistency
Preheat waffle iron to medium-high heat
Pour batter into waffle iron and cook until golden and crisp, about 3-5 minutes
Serve with desired toppings
