Paleo Sweet Potato Pancakes
Ingredients
- 1/3 cup mashed baked sweet potato
- 1/2 mashed ripe banana
- 1/2 cup cassava flour
- 2 tablespoons olive oil
- 2 eggs
- 1 teaspoon baking soda and pumpkin pie spice
- 1/3 cup nut milk
Toppings
- Strawberry
- Almond butter
- Granola
- Hemp seeds
- Coconut flakes
Preparation
Mash the sweet potato and banana if not already done.
In a bowl, mix together the dry ingredients: cassava flour, baking soda, and pumpkin pie spice.
In another bowl, combine the wet ingredients: mashed sweet potato, mashed banana, olive oil, eggs, and nut milk.
Stir the wet mixture into the dry mixture until just combined.
Heat a skillet over medium heat and lightly grease with oil.
Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
Serve with desired toppings.
