Sweet Potato Waffle Brunch Delight

Ingredients

  • 1/3 cup mashed sweet potato
  • 1/2 mashed ripe banana
  • 1/2 cup cassava flour
  • 2 tbsp olive oil or nut milk
  • 2 eggs or flax eggs
  • 1 tsp baking soda
  • 1 tsp cinnamon

Toppings

  • Sautéed apple
  • Kween and Co butter
  • Blueberry
  • Hemp seeds
  • Purely Elizabeth granola

Preparation

  1. Mash the sweet potato and banana together in a bowl.

  2. Combine all dry ingredients (cassava flour, baking soda, cinnamon) in a separate bowl.

  3. Add wet ingredients (olive oil or nut milk, eggs or flax eggs) to the mashed mixture and stir well.

  4. Mix the dry and wet ingredients to form a smooth batter.

  5. Preheat the waffle iron according to manufacturer's instructions.

  6. Pour the batter into the waffle iron and cook until golden and crisp.

  7. Serve the waffle with desired toppings.
