Sweet Potato Waffle Brunch Delight
Ingredients
- 1/3 cup mashed sweet potato
- 1/2 mashed ripe banana
- 1/2 cup cassava flour
- 2 tbsp olive oil or nut milk
- 2 eggs or flax eggs
- 1 tsp baking soda
- 1 tsp cinnamon
Toppings
- Sautéed apple
- Kween and Co butter
- Blueberry
- Hemp seeds
- Purely Elizabeth granola
Preparation
Mash the sweet potato and banana together in a bowl.
Combine all dry ingredients (cassava flour, baking soda, cinnamon) in a separate bowl.
Add wet ingredients (olive oil or nut milk, eggs or flax eggs) to the mashed mixture and stir well.
Mix the dry and wet ingredients to form a smooth batter.
Preheat the waffle iron according to manufacturer's instructions.
Pour the batter into the waffle iron and cook until golden and crisp.
Serve the waffle with desired toppings.
