Paleo Chocolate Butternut Squash Pancakes
Ingredients
- 1/3 cup butternut squash purée
- 1/2 mashed ripe banana
- 1/2 cup cassava flour
- 2 - 3 tbsp cacao powder
- 2 tbsp coconut oil
- 2 eggs
- 1/3 cup nut milk
- 1 tsp baking soda
- 2 tsp pumpkin pie spice

Preparation
In a bowl, combine dry ingredients like cassava flour, cacao powder, baking soda, and pumpkin pie spice
In another bowl, mix wet ingredients including butternut squash purée, mashed banana, coconut oil, eggs, and nut milk
Combine wet and dry mixtures to form a batter, stirring until smooth
Heat a non-stick pan or griddle over medium heat and add a little oil or butter
Pour batter onto the pan to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown
Serve pancakes with desired toppings
