Sweet Potato Pancake Breakfast Tacos

Ingredients

  • 1/3 cup sweet potato purée
  • 1/4 cup cassava flour
  • 2 tbsp olive oil
  • 1/4 cup nut milk (adjust depending on consistency, you want it to be gooey not too liquidy)
  • 1 egg (vegan sub for flax eggs)
  • 1 tsp baking soda
  • 1 tsp pumpkin pie spice + pinches of sea salt

Toppings

  • Bananas + chocolate chia seeds
  • Strawberries + granola butter + cacao nibs
  • Mango + bloobs + mint
  • Side of granola + maple syrup

Preparation

  1. Mix all ingredients for the taco shells to form a batter.

  2. Cook the batter on a heated pan or griddle to make taco shells.

  3. Prepare the toppings by chopping fruits and other items as needed.

  4. Assemble the tacos by placing the desired toppings inside the taco shells.

  5. Serve immediately, optionally with additional granola and maple syrup.
