Paleo Sweet Potato Carrot Waffle Cake
Ingredients
- 1/3 cup sweet potato purée
- 1/4 cup leftover roasted carrots
- 3 tbsp coconut oil
- 1/4 cup nut milk
- 2 eggs (vegan sub for flax eggs)
- 1/3 cup cassava flour
- 1 tsp baking soda
- 1/2 tsp cinnamon, ginger, cardamom
Toppings
- Caramelized banana
- KWEEN andco granola butter
- purely_elizabeth granola
- pecans
Preparation
Blend all the wet ingredients first then add flour, baking soda, spices.
Cook in waffle iron.
