Gluten-Free Vegan Chocolate Brownies
Ingredients
For brownies
- 1 cup gluten free flour, sifted
- 1/4 cup cacao powder
- 1 cup maple syrup
- 1/3 cup coconut butter, melted
- 1/4 cup almond milk
- 1/4 teaspoon vinegar
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 3 tablespoons vegan chocolate chips
For ganache and topping
- 1 tablespoon almond milk
- 3 tablespoons vegan chocolate chips
- 1/2 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- 1/3 cup walnuts, chopped
Preparation
Preheat the oven to 350F.
Sift flour with baking powder together first and in another bowl combine non-dairy milk and vinegar and let it rest for 5 minutes.
Mix all brownie ingredients in a bowl and blend well.
Pour batter into a greased pan and bake for 15-20 minutes.
To make ganache, add milk and agave to a small pan until the simmering point is reached.
Remove from heat and add chocolate chips and vanilla extract, wait 2 minutes and stir until fully melted and smooth.
Ensure the texture is smooth but not too runny.
Once the brownies are cool, spread ganache on top and sprinkle with chopped walnuts.
Tips
For a more gooey texture, add 1-2 chia eggs to the brownie mixture.
