Gooey Moist Rich Chocolate Chip Blondies
Ingredients
Wet
- One 15 oz can chickpeas rinsed and drained (265 g)
- 1/2 cup plant-based milk (120 ml)
- 1/2 tbsp apple cider vinegar
- 1/3 cup nut butter or seed butter of choice (80 g)
- 2 tsp vanilla extract
Dry
- 1/2 cup xylitol or sugar of choice (100 g)
- 3/4 cup ground almonds (90 g)
- 4 tbsp ground flax seeds (28 g)
- 3/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp sea salt
- 1/3 cup dairy-free chocolate chips + more for the top (60 g)
Preparation
Preheat the oven to 180°C
Line an 8x8 inch baking pan with parchment paper
In a food processor or blender, combine the wet ingredients and blend until smooth
In a large bowl, mix together the dry ingredients except the chocolate chips
Add the wet mixture to the dry mixture and stir until well combined
Fold in 1/3 cup of dairy-free chocolate chips
Spread the batter evenly into the prepared pan and sprinkle additional chocolate chips on top
Bake for 25-30 minutes or until a toothpick inserted comes out clean
Allow to cool completely before cutting into squares
