Gooey Moist Rich Chocolate Chip Blondies

Ingredients

Wet

  • One 15 oz can chickpeas rinsed and drained (265 g)
  • 1/2 cup plant-based milk (120 ml)
  • 1/2 tbsp apple cider vinegar
  • 1/3 cup nut butter or seed butter of choice (80 g)
  • 2 tsp vanilla extract

Dry

  • 1/2 cup xylitol or sugar of choice (100 g)
  • 3/4 cup ground almonds (90 g)
  • 4 tbsp ground flax seeds (28 g)
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1/3 cup dairy-free chocolate chips + more for the top (60 g)

Preparation

  1. Preheat the oven to 180°C

  2. Line an 8x8 inch baking pan with parchment paper

  3. In a food processor or blender, combine the wet ingredients and blend until smooth

  4. In a large bowl, mix together the dry ingredients except the chocolate chips

  5. Add the wet mixture to the dry mixture and stir until well combined

  6. Fold in 1/3 cup of dairy-free chocolate chips

  7. Spread the batter evenly into the prepared pan and sprinkle additional chocolate chips on top

  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean

  9. Allow to cool completely before cutting into squares
