Chocolate Swirl Banana Cake
Ingredients
- 3/4 cup full fat coconut milk
- 1/2 teaspoon apple cider vinegar
- 3 spotted ripe bananas
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1 cup spelt or white wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch sea salt
- 1/4 cup raw cacao or unsweetened cocoa powder
- 1/2 cup nondairy chocolate chips, optional
Preparation
Preheat oven to 375 degrees F.
Oil 9”x9” square baking pan or line with parchment paper.
Place coconut milk in a medium bowl with vinegar. Set aside for a moment to make vegan buttermilk.
Peel and mash your bananas in a large bowl.
Add buttermilk, sugar, and vanilla and stir.
Add flour, baking powder, baking soda, and salt, and mix until just combined.
Pour half of the batter into prepared baking pan and sprinkle with 1/4 cup chocolate chips.
Make chocolate layer by adding 1/4 cup cocoa powder to remaining batter and stir until no lumps remain.
Pour chocolate batter on top of banana bread batter and sprinkle with remaining 1/4 cup chocolate chips.
Bake for 30-35 minutes until brown on top.
Cool, slice and enjoy.
