Healthy Banana Oat Blondies

Ingredients

  • approx. 260 g banana (preferably ripe, mashed or pureed)
  • 1 tsp apple cider vinegar
  • 50 g nut butter
  • 25 g protein powder (e.g., 6k from @nutritionplus.de)
  • 200 g oat flakes
  • a pinch of salt
  • 30 g xylitol, erythritol, coconut blossom sugar, or sugar
  • 50 g dark chocolate (optional: sugar-free)
  • 1/3 tsp baking soda
  • 2 tsp baking powder
  • 10 g flaxseeds
  • 300 ml plant-based milk

Optional toppings

  • one banana, nuts, dried fruits

Preparation

  1. Preheat the oven to 180°C with top and bottom heat

  2. Mix all ingredients into a dough.

  3. Spread the dough in a baking form lined with baking paper, preferably a 22x22 cm square one.

  4. Decorate with banana slices, nuts, and dried fruits.

  5. Bake for 45-60 minutes until golden brown.
