Healthy Crispy Peanut Butter Rice Cups

Ingredients

  • 20g puffed whole grain rice • 40g peanut butter (100% peanuts) • 40g rice syrup (or other) • 120g dark chocolate (optional: sugar-free) • a pinch of salt

Preparation

  1. Melt the chocolate in a water bath while mixing all other ingredients

  2. Spread the liquid chocolate into small cups / muffin cases

  3. It is easiest with silicone molds

  4. Place briefly in the freezer to cool down

  5. If the sides are too thin, just make a second layer of chocolate

  6. Press the rice and peanut mixture into the cups with the cold chocolate

  7. Cover with the remaining chocolate and put back in the freezer

  8. Here they are stored great and can be nibbled one after the other
