Chocolate Avocado Pudding Truffles

Ingredients

  • 3 ripe avocados (~450g)
  • 3–4 tbsp maple syrup
  • 1/4 cup nut/seed butter
  • 1 tsp vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 tsp salt
  • 1/4 cup shelled pistachios
  • 1/4 cup unsweetened shredded coconut

Preparation

  1. Scoop the avocado flesh into a food processor

  2. Add the maple syrup, nut/seed butter, and vanilla

  3. Process until smooth

  4. Let it go for a while, you don’t want any lumps of avocado

  5. Add the cocoa powder and salt

  6. Process until combined

  7. Freeze until firm enough to scoop/roll into balls (2-3 hours)

  8. Blend or finely chop the pistachios and coconut together

  9. Roll the avocado chocolate mixture into balls

  10. Coat in the pistachio coconut mixture

  11. Eat! Keep in the freezer and soften a few minutes before eating
