Homemade Almond Joy Candy Bars

Ingredients

Base

  • 1/2 cup dark chocolate chips
  • 2 tsp coconut oil

Coconut layer

  • 1 3/4 cup unsweetened coconut flakes
  • 3 tbsp coconut oil
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract (optional)
  • 18-24 almonds

Top layer

  • 1/2 cup dark chocolate chips
  • 2 tsp coconut oil
  • Sea salt (optional)

Preparation

  1. Line a loaf or bread pan with parchment paper

  2. Melt the ingredients for the base layer, then evenly spread it across the bottom of the pan. Freeze for 10-15 minutes until mostly hardened but not totally solid so that the coconut layer can attach better

  3. Blend the coconut layer ingredients (besides almonds) until coconut flakes are very small pieces. Evenly spread across the bottom layer

  4. Make 3 rows of almonds - 2 close together, then a little bit of space and 2 more close together. For 9 bars use 18 almonds; for 12 bars use 24 almonds

  5. Melt the ingredients for the top layer. Pour over the top and tilt the pan side to side to spread evenly. Sprinkle with sea salt if desired

  6. Freeze for about 30 minutes and enjoy
