Marbled Chocolate and Peanut Butter Banana Bread

Ingredients

  • 60g butter, plus extra for greasing
  • 200g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 bananas, ripe and mashed
  • 120ml milk
  • 240g plain flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 125g chocolate spread
  • 100g peanut butter

Preparation

  1. Preheat the oven to 180C. Lightly grease a loaf tin.

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Whisk in the eggs, one at a time. Then stir in the vanilla extract.

  4. Add in the mashed banana and milk. Mix to combine.

  5. Sieve in the flour, baking soda and salt into the bowl. Gently fold until the flour is fully incorporated.

  6. In a small bowl, loosen the chocolate spread for 15-20 seconds in the microwave.

  7. Add 3/4 cup of the batter to the chocolate spread and mix to combine.

  8. Add the plain batter to the loaf tin, adding blobs of the chocolate mix throughout. Use a knife to swirl the batters together to create a marble effect.

  9. Loosen the peanut butter in the microwave then add blobs onto the batter across the top.

  10. Bake for 50 minutes to 1 hour, until a skewer comes out just clean. Leave to cool in the tin for 15 minutes then remove to cool completely.
