No Bake Vegan Potato Pie

Ingredients

  • 1 1/2 cup oat flour
  • 2 tbsp coconut oil
  • tbsp agave syrup
  • 2 tbsp cocoa powder
  • 1 cup cashews
  • 4 tbsp coconut oil
  • 1 cooked sweet potato- peeled
  • 2 tbsp new salted caramel syrup
  • tsp cinnamon
  • pinch salt
  • 1/2 tsp ground ginger
  • 1/2 cup coconut yoghurt
  • 3 tbsp agave syrup
  • 40g vanilla vegan protein
  • 3 heaped tbsp smooth peanut butter
  • 2 tbsp cashew butter
  • 2 tbsp coconut cream
  • tbsp agave

Preparation

  1. Mix together the base ingredients and press into a lined loose bottom tin and firmly pack down

  2. Combine they filling ingredients and blend until ultra smooth and creamy

  3. Pour this over the base and pop into the freezer to set for 4 hours or overnight

  4. For the caramel, mix the cashew butter, syrup and coconut cream then spread this over the cheesecake

  5. Top with some vegan squirt cream if you desire & allow to the a little before serving! enjoy!?
