Pancakes with Three Topping Options

Ingredients

  • 1/2 cup simplemills pancake mix
  • 1/4 cup bobsredmill chickpea flour
  • 2 eggs (vegan substitute: flax eggs)
  • 2 tablespoons coconut oil
  • 1/4 tablespoon nut milk
  • 1 ripe banana
  • 1 teaspoon baking soda

Toppings

  • Banana
  • Granola (purely elizabeth)
  • Blueberries
  • Vegan yogurt (thecoconutcult)
  • Nut butter
  • Chocolate chunks (squareorganics)

Preparation

  1. Mash the ripe banana.

  2. In a large bowl, combine the dry ingredients: pancake mix, chickpea flour, and baking soda.

  3. In another bowl, mix the wet ingredients: eggs, coconut oil, nut milk, and the mashed banana.

  4. Combine the wet and dry mixtures to form a batter, stirring until just mixed.

  5. Heat a skillet or griddle over medium heat and lightly grease it.

  6. Pour batter onto the skillet to form pancakes and cook until bubbles appear, then flip and cook until golden brown.

  7. Serve the pancakes with desired toppings: option 1 with banana and granola; option 2 with blueberries, vegan yogurt, and nut butter drizzle; option 3 with chocolate chunks.
