Sweet Potato Waffle Toasts with Toppings

Ingredients

  • 1/3 cup mashed sweet potato
  • 2 eggs
  • 1/4 cup almond flour
  • 1/4 cup cassava flour
  • 1/4 cup nut milk
  • 2 tablespoons coconut oil
  • 1/2 cup almond flour
  • 1 teaspoon baking soda

Toppings

  • Banana
  • Cacao nibs
  • Granola butter
  • Strawberry
  • Granola
  • Hemp seeds

Preparation

  1. Steam or bake sweet potato until soft, then peel and mash to prepare the mashed sweet potato.

  2. In a mixing bowl, combine the mashed sweet potato, eggs, almond flour, cassava flour, nut milk, coconut oil, and baking soda to form a batter.

  3. Preheat a waffle iron and cook the batter until golden brown and crispy.

  4. Serve the waffles with desired toppings such as banana, cacao nibs, granola butter, strawberry, granola, and hemp seeds.
