Peanut Butter Chocolate Cookie Sandwich
Ingredients
- 1 cup gluten-free oats
- 1.5 mashed bananas
- 1/3 cup peanut butter
- 2 tablespoons maple syrup
- 1/8 cup peanut butter chips
- 1/8 cup chocolate chips
- Plain Greek yogurt (to taste)
- Optional: maple syrup
Preparation
Preheat oven to 350°F
In a bowl, mix together the oats, mashed banana, peanut butter, and maple syrup using a spatula
Add the peanut butter chips and chocolate chips, and mix well
Shape the mixture into cookiesand bake for 18-20 minutes
Allow the cookies to cool
Take two cookies and spread plain Greek yogurt between them
Optionally, mix a little maple syrup into the yogurt before assembling
