Peanut Butter Chocolate Cookie Sandwich

Ingredients

  • 1 cup gluten-free oats
  • 1.5 mashed bananas
  • 1/3 cup peanut butter
  • 2 tablespoons maple syrup
  • 1/8 cup peanut butter chips
  • 1/8 cup chocolate chips
  • Plain Greek yogurt (to taste)
  • Optional: maple syrup

Preparation

  1. Preheat oven to 350°F

  2. In a bowl, mix together the oats, mashed banana, peanut butter, and maple syrup using a spatula

  3. Add the peanut butter chips and chocolate chips, and mix well

  4. Shape the mixture into cookiesand bake for 18-20 minutes

  5. Allow the cookies to cool

  6. Take two cookies and spread plain Greek yogurt between them

  7. Optionally, mix a little maple syrup into the yogurt before assembling
