Pumpkin Banana Bread Baked Oats

Ingredients

  • 80g jumbo rolled oats
  • 120ml u/s soya milk
  • 120g pumpkin purée
  • 10g date syrup
  • 2 heaped tsp maca powder
  • 60g dried apricots or prunes
  • 1 banana

Preparation

  1. Pre-heat the oven to 180 degrees (fan) and like a baking dish with non-stick parchment paper

  2. Add all the ingredients but the banana into a mixing bowl and stir together until everything is fully distributed and combined and the consistency is thick and sticky

  3. Pour the mixture into the baking dish and peel then slice the banana lengthways and press into the top

  4. Bake for 1 hour or until the top is golden and the mixture is not wet inside when you poke it through so it’s thick but soft like this! (swipe for texture???)

  5. Enjoy straight out the oven or refrigerate and eat cold, or to microwave and re-heat it!
