Vanilla Coconut Oatmeal with Berries and Chocolate

Ingredients

  • 0.5 cup coconut milk
  • 0.5 cup water
  • 3/4 cup oats
  • 1 tbsp maple syrup
  • Dash of vanilla
  • Dash of salt

Toppings

  • strawberries
  • raspberries
  • a few squares of your favorite chocolate
  • quinoa puffs

Preparation

  1. Put all ingredients except toppings in a pot and bring to a boil.

  2. Reduce heat and simmer for 3-5 minutes until desired creaminess, stirring occasionally.

  3. Pour the oatmeal into a bowl.

  4. Add the chocolate squares immediately to let them melt.

  5. Top with strawberries, raspberries, and quinoa puffs.
