Vegan Hazelnut White Chocolate Wafer Bars
Ingredients
- 300g hazelnuts
- 100g vegan white chocolate
- Approximately 150g vegan milk chocolate
- Optional: 1-2 tsp coconut oil
- 8 wafers
Preparation
Roast the hazelnuts in the oven at 175°C (350°F) for 12-15 minutes.
Remove the hazelnuts from the oven and place them in a cloth. Rub the hazelnuts to remove the outer shells.
Transfer the hazelnuts to a bowl or mixer and allow them to cool.
In a water bath, melt the vegan white chocolate and about 30-40g of vegan milk chocolate.
Once melted, pour the chocolate mixture into the bowl with the hazelnuts.
Blend the mixture until it becomes completely smooth, which should take around 3-4 minutes. Transfer the mixture to a bowl and let it cool.
Take a wafer and spread the hazelnut-chocolate mixture on top. Repeat this process with 4 wafers, creating layers. Place the wafers in the freezer to cool.
While the wafers are cooling, melt the remaining vegan milk chocolate.
Coat one half of the wafer bars with the melted chocolate. Place the coated bars on a baking sheet. Repeat with the other wafer bars. Put them in the freezer for 3-5 minutes.
Remove the bars from the freezer and coat the other half with melted chocolate. Place the bars back in the freezer for an additional 5 minutes.
Once the bars are completely cooled and the chocolate is set, they are ready to be enjoyed!
Optional Adaptations
Use only vegan white chocolate for the hazelnut mix.
Add stevia for extra sweetness.
Coat the top half with melted vegan chocolate for a more Kinder Bueno-like appearance.
Crumble wafers into the hazelnut mix for added texture.
Consider adding coconut or coconut oil to the hazelnut mix or the chocolate coating for added flavor and glossiness.
Top the bars with roasted hazelnuts for extra crunch.
