High Protein Cashew Cookie Dough Hummus Board
Ingredients
- 1 cup raw cashews, toasted
- 1 1/2 cups chickpeas (drained from 1 can)
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon Ceylon cinnamon
- 1/2 teaspoon sea salt
- 1 bag RIND Cherry Cashew Crunch REMIX

Preparation
Toast the cashews until golden and fragrant.
Add the toasted cashews to a food processor and pulse until finely crumbled.
Add the chickpeas, maple syrup, vanilla extract, cinnamon, sea salt, and a couple of ice cubes, then pulse until smooth and creamy.
Serve the hummus at room temperature or chilled, topped generously with RIND Cherry Cashew Crunch REMIX.
Assembly
Arrange the hummus on a board with cherries, strawberries, blueberries, apples, dried apricots, pretzel twists, graham crackers, and cinnamon cookie brittle.
