Strawberry Heirloom Tomato Halloumi Salad
Ingredients
- 2 large heirloom tomato
- 10 mini heirloom tomatoes
- 8-10 strawberries
- 2 fistfuls arugula
- handful fresh mint
- 1 brick vegan halloumi
- Maldon sea salt and cracked pepper
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
Preparation
Slice the heirloom tomatoes and mini heirloom tomatoes
Hull and slice the strawberries
Chop the fresh mint leaves
Cook the vegan halloumi in a pan until golden brown
In a large bowl, combine the arugula, sliced tomatoes, strawberries, and chopped mint
Drizzle with olive oil and balsamic vinegar
Season with Maldon sea salt and cracked pepper to taste
Toss gently to mix and serve immediately
