Sweet Potato Paleo Pancakes
Ingredients
- 1/3 cup mashed baked sweet potato
- 1/2 mashed ripe banana
- 1/2 cup cassava flour
- 2 tablespoons olive oil
- 2 eggs or flax eggs for vegan
- 1 teaspoon baking soda
- 2 teaspoons pumpkin pie spice
Toppings
- Spiced honey or similar
- almond butter
- granola
- hemp seeds
- chocolate bar chunks
Preparation
Mash the sweet potato and banana if not already done.
In a bowl, combine dry ingredients: cassava flour, baking soda, and pumpkin pie spice.
In another bowl, mix wet ingredients: mashed sweet potato, mashed banana, olive oil, and eggs.
Combine wet and dry mixtures until just blended, avoiding overmixing.
Heat a skillet or griddle over medium heat and lightly grease with oil.
Pour batter onto the skillet to form pancakes; cook until bubbles appear, then flip and cook until golden brown.
Serve pancakes with desired toppings.
