Sweet Potato Paleo Pancakes

Ingredients

  • 1/3 cup mashed baked sweet potato
  • 1/2 mashed ripe banana
  • 1/2 cup cassava flour
  • 2 tablespoons olive oil
  • 2 eggs or flax eggs for vegan
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice

Toppings

  • Spiced honey or similar
  • almond butter
  • granola
  • hemp seeds
  • chocolate bar chunks

Preparation

  1. Mash the sweet potato and banana if not already done.

  2. In a bowl, combine dry ingredients: cassava flour, baking soda, and pumpkin pie spice.

  3. In another bowl, mix wet ingredients: mashed sweet potato, mashed banana, olive oil, and eggs.

  4. Combine wet and dry mixtures until just blended, avoiding overmixing.

  5. Heat a skillet or griddle over medium heat and lightly grease with oil.

  6. Pour batter onto the skillet to form pancakes; cook until bubbles appear, then flip and cook until golden brown.

  7. Serve pancakes with desired toppings.
