Vegan Pancakes with Oat Flour and Blueberry Topping

Ingredients

  • 1 cup oat flour
  • 1 banana
  • 1 flax egg
  • 1 cup almond milk
  • 1/2 tbsp vegan butter
  • 1/4 tsp cinnamon
  • 2 tbsp coconut sugar or agave
  • 1/2 tsp salt
  • 1/2 tbsp orange juice
  • 1/2 tbsp baking powder
  • 1/2 tsp vanilla

Preparation

  1. Mix all ingredients with a hand mixer.

  2. Cook each pancake on medium heat for about 3 minutes on each side.

  3. Top with blueberry hummus and fresh blueberries.
