Matcha Chocolate Chip Pancakes

Ingredients

  • 1 cup almond milk
  • 1 ripe banana
  • 1 teaspoon vanilla
  • 1 cup plain all-purpose wholewheat flour
  • 3 teaspoons baking powder
  • 1.5 tablespoons coconut sugar
  • 1/4 teaspoon cinnamon
  • 1 tablespoon matcha
  • a pinch of salt

Preparation

  1. In a blender, add 1 cup almond milk, 1 ripe banana, and 1 teaspoon vanilla, then blend.

  2. Add 1 cup plain all-purpose wholewheat flour, 3 teaspoons baking powder, 1.5 tablespoons coconut sugar, 1/4 teaspoon cinnamon, 1 tablespoon matcha, and a pinch of salt, then blend on low until just combined.

  3. Cook on a frypan over medium heat for approximately 3 minutes on one side and another 1-2 minutes on the other side.

  4. Serve with your favorite toppings, such as fresh berries, coconut yogurt, maple syrup, and a dollop of matcha mint choc chip ice-cream with extra chocolate.
