Matcha Chocolate Chip Pancakes
Ingredients
- 1 cup almond milk
- 1 ripe banana
- 1 teaspoon vanilla
- 1 cup plain all-purpose wholewheat flour
- 3 teaspoons baking powder
- 1.5 tablespoons coconut sugar
- 1/4 teaspoon cinnamon
- 1 tablespoon matcha
- a pinch of salt
Preparation
In a blender, add 1 cup almond milk, 1 ripe banana, and 1 teaspoon vanilla, then blend.
Add 1 cup plain all-purpose wholewheat flour, 3 teaspoons baking powder, 1.5 tablespoons coconut sugar, 1/4 teaspoon cinnamon, 1 tablespoon matcha, and a pinch of salt, then blend on low until just combined.
Cook on a frypan over medium heat for approximately 3 minutes on one side and another 1-2 minutes on the other side.
Serve with your favorite toppings, such as fresh berries, coconut yogurt, maple syrup, and a dollop of matcha mint choc chip ice-cream with extra chocolate.
