Flour-Less Oatmeal Pancakes with Soft Scrambled Eggs

Ingredients

  • 1.5 cups rolled oats
  • 1 large ripe banana
  • 1 cup almond milk
  • 1 egg
  • 2 tbsp coconut sugar
  • 1 tsp vanilla
  • 2 tsp baking powder
  • dash of cinnamon
  • dash of sea salt
  • berries
  • real maple syrup
  • 4 eggs
  • oil
  • salt and pepper
  • chives

Preparation

  1. Combine 1.5 cups rolled oats, 1 large ripe banana, 1 cup almond milk, 1 egg, 2 tbsp coconut sugar, 1 tsp vanilla, 2 tsp baking powder, dash of cinnamon, and sea salt in a blender.

  2. Blend the mixture.

  3. Pour into a heated skillet with olive oil.

  4. Serve with berries and real maple syrup.

  5. For the soft scramble: Beat 4 eggs.

  6. Heat a pan with oil.

  7. Once hot, add the eggs and turn down the heat.

  8. Scramble for 1-2 minutes until no longer runny.

  9. Remove from heat and top with salt, pepper, and chives.
