Flour-Less Oatmeal Pancakes with Soft Scrambled Eggs
Ingredients
- 1.5 cups rolled oats
- 1 large ripe banana
- 1 cup almond milk
- 1 egg
- 2 tbsp coconut sugar
- 1 tsp vanilla
- 2 tsp baking powder
- dash of cinnamon
- dash of sea salt
- berries
- real maple syrup
- 4 eggs
- oil
- salt and pepper
- chives
Preparation
Combine 1.5 cups rolled oats, 1 large ripe banana, 1 cup almond milk, 1 egg, 2 tbsp coconut sugar, 1 tsp vanilla, 2 tsp baking powder, dash of cinnamon, and sea salt in a blender.
Blend the mixture.
Pour into a heated skillet with olive oil.
Serve with berries and real maple syrup.
For the soft scramble: Beat 4 eggs.
Heat a pan with oil.
Once hot, add the eggs and turn down the heat.
Scramble for 1-2 minutes until no longer runny.
Remove from heat and top with salt, pepper, and chives.
