Fluffy Greek Yogurt Pancakes with Maple Syrup

Ingredients

  • 1 cup whole wheat flour
  • 1 cup AP flour
  • 1 tablespoon baking powder
  • 1 tablespoon coconut sugar
  • 1 1/2 cups almond milk
  • 2 large eggs
  • 1 teaspoon vanilla
  • sprinkle of sea salt
  • 1/2 cup Greek yogurt

Toppings

  • blueberries
  • real maple syrup

Preparation

  1. Combine 1 cup whole wheat flour, 1 cup AP flour, 1 tablespoon baking powder, and 1 tablespoon coconut sugar.

  2. Add in 1 1/2 cups almond milk, 2 large eggs, 1 teaspoon vanilla, and a sprinkle of sea salt.

  3. Stir in 1/2 cup Greek yogurt.

  4. Heat a pan and spray with cooking spray, such as avocado oil spray.

  5. Spoon batter onto the pan and cook for 3 minutes per side.

  6. Serve with blueberries and real maple syrup.

  7. Note that pancakes are just as good reheated the next day.
