Fluffy Greek Yogurt Pancakes with Maple Syrup
Ingredients
- 1 cup whole wheat flour
- 1 cup AP flour
- 1 tablespoon baking powder
- 1 tablespoon coconut sugar
- 1 1/2 cups almond milk
- 2 large eggs
- 1 teaspoon vanilla
- sprinkle of sea salt
- 1/2 cup Greek yogurt
Toppings
- blueberries
- real maple syrup
Preparation
Combine 1 cup whole wheat flour, 1 cup AP flour, 1 tablespoon baking powder, and 1 tablespoon coconut sugar.
Add in 1 1/2 cups almond milk, 2 large eggs, 1 teaspoon vanilla, and a sprinkle of sea salt.
Stir in 1/2 cup Greek yogurt.
Heat a pan and spray with cooking spray, such as avocado oil spray.
Spoon batter onto the pan and cook for 3 minutes per side.
Serve with blueberries and real maple syrup.
Note that pancakes are just as good reheated the next day.
