Tex-Mex Savory Crepes with Cheese and Avocado

Ingredients

Crepe batter

  • 1 cup flour
  • 1/2 cup almond milk
  • 1/2 cup water
  • 2 tbsp melted butter
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp coconut sugar
  • pinch of salt

Filling

  • 4 eggs
  • oil
  • avocado
  • cheddar cheese
  • salsa

Preparation

  1. Combine crepe ingredients and whisk until smooth.

  2. Heat a nonstick pan with oil, add batter, cook 1-2 minutes until bubbles form, then flip and cook.

  3. If flipping is difficult, make mini crepes as an alternative.

  4. Keep crepes warm in the oven.

  5. For the filling, whisk 4 eggs.

  6. Add more oil to the pan, pour in the eggs, swirl the pan, and let cook for 1-3 minutes, then flip and cook for 2 more minutes.

  7. Slice the avocado and shred the cheddar cheese.

  8. Assemble the crepes by spreading salsa, cheese, and avocado inside, then fold in half and fold again.

  9. Enjoy the dish!
