Tex-Mex Savory Crepes with Cheese and Avocado
Ingredients
Crepe batter
- 1 cup flour
- 1/2 cup almond milk
- 1/2 cup water
- 2 tbsp melted butter
- 2 eggs
- 1 tsp vanilla
- 1 tsp coconut sugar
- pinch of salt
Filling
- 4 eggs
- oil
- avocado
- cheddar cheese
- salsa
Preparation
Combine crepe ingredients and whisk until smooth.
Heat a nonstick pan with oil, add batter, cook 1-2 minutes until bubbles form, then flip and cook.
If flipping is difficult, make mini crepes as an alternative.
Keep crepes warm in the oven.
For the filling, whisk 4 eggs.
Add more oil to the pan, pour in the eggs, swirl the pan, and let cook for 1-3 minutes, then flip and cook for 2 more minutes.
Slice the avocado and shred the cheddar cheese.
Assemble the crepes by spreading salsa, cheese, and avocado inside, then fold in half and fold again.
