Classic Crêpes ? with Nutritious Nutella

Ingredients

  • serves: 10 crepes
  • 1 cup flour
  • 1/2 tsp salt
  • 2 eggs
  • 11/4 almond milk
  • 2 tbsp. coconut oil + extra for cooking

Preparation

  1. In a medium-sized mixing bowl, combine the dry ingredients

  2. Whisk the eggs and milk in a smaller bowl

  3. Pour the egg mixture into the bowl with the dry ingredients. Add 1/4 of the mixture, at a time to get a silky smooth texture

  4. Add coconut oil into the batter. Whisk well

  5. Cover the crepe batter with plastic wrap

  6. Refrigerate it overnight (or at least 1 hr)

  7. Heat a large frying pan/crepe pan over medium heat

  8. Grease the pan with oil before pouring 1/4 cup of crepe batter. Make sure to spread the batter evenly

  9. Cook for 30 secs to 1 min (or until the crepe looks cooked)

  10. Flip over to cook the remaining side (30 secs)

  11. Slather your crepes with homemade Nutella and top them with fresh fruits

  12. Tip: Overnight refrigeration keeps the crepe soft
