Blueberry Jam Pancake Rolls

Ingredients

  • 1 cup flour
  • 1 cup water or milk (dairy or dairy-free)
  • 1 tablespoon oil

Preparation

  1. For the crepes: first you'll have to prepare the pancake batter

  2. Mix all of the ingredients together until well combined

  3. Heat your pan really well (that's important)

  4. Drizzle it with just a little bit of oil and spread evenly across the pan's surface

  5. Then pick the pan up from the stove top and pour into it enough mixture to cover the pan thinly

  6. You can use a small ladle for measuring

  7. Then using a circle hand motion spread the amount of mixture across your pan, so that it's bottom is all covered

  8. Wait until the ends of the pancake start to rise (peel off) slightly from the pan and flip your crepe with a spatula

  9. Repeat until all mixture is cooked

  10. For the rolls: when all your pancakes are ready (you'll get around 4 or 5 from this mixture), it's time for the jam ? cover one pancake with jam, roll it tightly

  11. Then cover another pancake in jam, put the rolled crepe onto the second one's end and roll them together (to form a bigger roll)

  12. Or you can just make tiny rolls from single pancakes

  13. Then cut into rolls and put them carefully on a wooden skewer
